{Teacher Week 2015} Make Ahead Meals!

 Happy Tuesday! Linking up again with Blog Hoppin' for #TeacherWeek2015!! Today it's:


I love food. Like love, LOVE it. I can eat everything at all times of the day. But sometimes I just don't want to spend time making it!! So make ahead meals come in handy. Here are some of my faves!

Protein Salad:
This is a Whole 30 recipe that I have simply loved since I did my first Whole 30. Super simple to make and create that I make a batch every Sunday and pack it for lunch throughout the week. I've stuffed bell peppers, used it as celery dip, topped green salads/spinach with it - it's really quite versatile.





I like to add golden raisins, apple cider vinegar, walnuts, and chopped Granny Smith Apples!! Pair with a side of fruit and your lunch is done!
YUMMO. 

I also do a TON of Freezer Meals. These are so simple and I'm so happy when I come home after one has been cooking in the Crock Pot all day!! 

My faves - Pulled Pork, Chicken and Sweet Potatoes, Citrus Chicken Salad Strips, Crockpot Meatballs, Sundried Tomato and Spinach Burgers, Paleo Chicken Lettuce Wraps, Apple, Cherry Pork Loin. 
All of these meals came from Once a Month Meals and please go check out that website ASAP because it is amazing. There are so many recipes! 
You are bound to find something that will suit your fancy. 

And your picky family, if you have that sort of thing...

which I of course would know nothing about. 

At all. Picky-ness, what's that????

Anyways....the leftovers make for great lunch the next day. Super delicious and easy to pack.

{Teacher Week 2015} Five Fun Facts!

Happy Monday, y'all! I am so excited to be linking up with Blog Hoppin' for this fun Teacher Week!

Up today: Five Fun Facts!

Here goes:
I love my job!! I work as a first grade instructor at Mayfair Laboratory School in Baton Rouge. We do so much fun learning that I am always excited to go to work! 

Loving what I do is something of which I am very proud! 
 
Here are some pics of my kiddos from last year!

I have an awesome family!

 My sister Jennifer has two kids: Jessica and Casey. My cousin Kathleen lives in Omaha, Nebraska and is becoming an Occupational Therapist. Every year we have a Vicknair Family Reunion! And every year we take a vacation as a big family with my parents, my aunt and uncle, my sister, and my grandmother.

 Last year we went to Philadelphia and the Poconos. Read all about that fabulous adventure {HERE}.   I have a 14 year old daughter, Carly, who is in HIGH SCHOOL!
Here she is at 4 and at 14. 

Oh, and btw we LOVE Disney! 
We were Anna and Elsa for Halloween. I also love Marvel. Captain America mostly. Especially Captain America.

I love to sew, knit, and crochet. (I made our costumes for Halloween, above.)



Here are some things that I crocheted at Christmas for gifts. 
I also bake. Like a lot. 
Here are just a few cookies from this year. 


 I try to make cookies at least once a month. I also bake cakes and cupcakes. Not to blow my own horn or anything, but these cookies are amazing. Find my AWESOME cookie recipe {HERE}.
Back to School Cookies
I love coffee. Like love, LOVE it. I would take it in IV is that was possible. 
Lorelei Gilmore is my spirit animal.
